Ingredients
  

  • 1 Large onion
  • 2 Garlic cloves
  • 1 red chilli
  • 2 sprigs thyme
  • 200 ml Olive oil
  • 500 g of good-quality beef mince
  • 1 teaspoon of ground cumin
  • 2 1/8 teaspoons of sweet paprika
  • 1 teaspoon of dried oregano
  • 3 fresh tomatoes
  • 400 g of canned chopped tomatoes
  • 5 tablespoons of tomato puree
  • 200 ml chicken or beef stock
  • 1 stick cinnamon
  • 1 bay leaf
  • 400 g of kidney beans
  • 100 g Salt and pepper to taste

Instructions
 

  • In a large saucepan, heat 2 & 1/8 tablespoons of oil & add the onion, garlic, chilli, & thyme. At same time, brown the ground beef in a separate pan with the bit of oil.
  • Add the dried spices to the onions cook them until their smell comes out. after that add the beef & stir it in well.
  • Add the fresh & canned tomatoes & cook for about 6 minutes.
  • Pour in the stock & taste it to decide how much tomato puree to add.
  • Put in the cinnamon & bay leaf, bring the boiling water to a boil, & then turn down the heat to a simmer.
  • Once the sauce starts to thicken, add the kidney beans & let them cook for another 4 – 9 minute so the beans can soak up the flavour.
