Ingredients
- 1 Large onion
- 2 Garlic cloves
- 1 red chilli
- 2 sprigs thyme
- 200 ml Olive oil
- 500 g of good-quality beef mince
- 1 teaspoon of ground cumin
- 2 1/8 teaspoons of sweet paprika
- 1 teaspoon of dried oregano
- 3 fresh tomatoes
- 400 g of canned chopped tomatoes
- 5 tablespoons of tomato puree
- 200 ml chicken or beef stock
- 1 stick cinnamon
- 1 bay leaf
- 400 g of kidney beans
- 100 g Salt and pepper to taste
Instructions
- In a large saucepan, heat 2 & 1/8 tablespoons of oil & add the onion, garlic, chilli, & thyme. At same time, brown the ground beef in a separate pan with the bit of oil.
- Add the dried spices to the onions cook them until their smell comes out. after that add the beef & stir it in well.
- Add the fresh & canned tomatoes & cook for about 6 minutes.
- Pour in the stock & taste it to decide how much tomato puree to add.
- Put in the cinnamon & bay leaf, bring the boiling water to a boil, & then turn down the heat to a simmer.
- Once the sauce starts to thicken, add the kidney beans & let them cook for another 4 – 9 minute so the beans can soak up the flavour.
